    Patty's Peanut Brittle

    Patty’s Peanut Brittle

    2 cups sugar
    1 cup light corn syrup
    ½ cup water
    2 cups Spanish Peanuts (roasted, salted) {a 12 oz. can is close enough}
    2 tsp. baking soda (heaping)

    In a large kettle stir together sugar, corn syrup, and water. Stir constantly until boiling. Cook without stirring until 280° on your candy thermometer.
    Stir in peanuts, cook stirring until 300°. Remove from heat.
    Quickly stir in baking soda. Mix thoroughly (unblended soda tastes awful!).
    Pour onto 2 foil lined, lightly greased* cookie sheets. DO NOT SPREAD.
    When completely cooled break into pieces. KEEP DRY, moisture will ruin peanut brittle.
    *Reynolds Release Foil is amazing! You don't need to grease it and you can use it for more than one batch.

    Tips from Patty:
    During the time that you boil without stirring, you have time to prepare the cookie sheets, measure out the peanuts and soda.
    It is best to measure the soda into a small dish or cup before it is needed. Be sure there are NO lumps, mash any with the back of a spoon, a lump of soda is worse than unblended powdered soda.

    DO NOT get distracted!! It only takes about 20 minutes from start to final pour, but it only takes a minor distraction to burn it. (voice of experience).
    To use a candy thermometer: clip it to the inside of a large kettle (I use the pan of a pressure cooker with a good handle for pouring), make sure the bulb of the thermometer is about ½ inch off the bottom of the pan, (if touching the bottom of the pan, it won't give an accurate reading.

    Brittle Cracker candy

    Patty's version GF Cracker Brittle Candy

    Corn Chex or other GF crisp cereal. About 2 cups

    2 cups (4 sticks) butter (either salted or unsalted; do not use margarine)
    2 cups + 2 Tbsp. firmly packed brown sugar (I prefer light)
    1 bag chocolate chips (I like semi-sweet)
    1/2 to 3/4 cup toasted chopped pecans (or toasted chopped almonds)
    {nuts are optional, I don't add them to mine}

    Instructions:
    Preheat oven to 350 degrees Line cookie sheet with foil & Butter & salt foil. Cover sheet with Corn Chex or other GF crisp cereal
    In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium.
    Continue stirring until boiling - then boil for 3 minutes (set timer).
    Pour over cereal, spread evenly working quickly.
    Put sheet into oven - bake for 5 minutes.
    Remove - pour chocolate chips over top - place a sheet of foil over and let melt for ~3 minutes.
    Spread melted chocolate over the top evenly. If the chocolate chips still aren't spreadable, stick tray back in the oven for 2-3 minutes.
    Add nuts to top - replace foil and refrigerate until set
    {nuts are optional, I don't add them to mine}
    (can be frozen) IF it lasts that long! ????

    Baked rice pudding

    5 tbs short grain rice, 2 tbs sugar, 3 cups full cream milk, 2 or 3 drops of vanilla essence, 1 tsp butter, 1/4 tsp ground nutmeg.
    Place the rice add sugar in the base of an ovenproof dish.
    Add milk and vanilla.
    Add butter.
    Sprinkle nutmeg over the surface.
    Bake at 150C for 2 hours, stirring two or three times during the first hour.
    This pudding should be creamy when cooked. Serves 4.

    Snail shell:
    Make magic ring, 6 sc in ring (or ch 2, 6 sc in second ch from hook). Do not join.

    Fasten off.
    Starting at the closed end (the beginning ring), roll into a spiral sewing in place along the center.
    Head/Body:

    Single Crochet Pot holder

    Single Crochet Pot holder:
    Chain 32, SC in second Ch from hook and each ch to end.
    3 sc in last ch, sc in each ch up the other side. 2 sc in first ch.
    Sc around without changes until piece folds into a square.
    Fasten off and sew seam. chain a hanging loop if desired.

    No Brainer lace scarf

    crocadile stitch Christmas tree

    I will tell you, I tried and tried to catch on to this stitch, and until this pattern couldn't. This is the easiest crocodile stitch pattern I have found. Have fun!

    H, G, F and E hooks

    Special st: the crocodile st is worked over the 2 dc’s that are made together in the 1 dc. 5 dc are worked around the 1st dc, then another 5 dc worked around the 2nd dc. To work your 1 st, 5 dc you must turn your working piece on its side to the right, so you will work your 5 dc from the top of the side post downwards. When working the other side, you will turn your working piece on its side to the left, so you will work your 5 dc from the bottom of the side post and upwards
    With H hook
    Row 1: Ch 43 and slip stitch in first ch (be sure not to twist chain).
    Row 2: Ch 1 and sc in each ch across (42 sc)
    Row 3: Ch 1 and in same sc do 2 dc,, ch 1 *sk 2 sc, 1 dc in next sc, ch 1, sk 2 sc in next sc, ch 1, sk 2 sc, 2 dc in next sc, ch 1*
    Same as between* across to last 3 sc, sk 2 sc and in last sc put in dc and sl st into first dc, ch 1 and turn Now you will start crocodile stitch
    Row 4: Should have 7 groups of crocodile stitch. At end sl st through last dc,
    Row 5: Repeat row 3

    Change to G hook

    Snowman top hat

    The brimmed hat I made for my snowmen:
    Make magic ring,
    1) Ch1, 6sc, do not join.
    2) 2sc in each sc, pull magic ring tight, (12 st)
    3) working in back loops sc in each sc around.
    4, 5) sc in each sc around.
    6) working in front loops, 1sc, 2sc in 1 (inc), around, (18st)
    7)1sc, 1sc,1 inc, around. Fasten off.

    simple afghan pattern

    I lost directions for making an afghan and a friend of mine gave me the directions over the phone. Something is wrong because I don't come up with the right number of stitches. Maybe I am misinterpreting them.

    Cast on 129 stitches.

    1. Knit nine rows.
    2. Knit 5 *Purl 2 together 3 times; (Yarn over, knit 1) 5 times; Yarn over, purl 2 together 3 times. Repeat from * to last 5 stitches, Knit 5.
    3. Knit.
    4. Knit 5, Purl 119, Knit 5.

    Repeat 2 through 4.

    The problem is with No. 2.

    I would love help with this. Thank you.

    mohair stole

    Size 10 1/2 needles (US) with lace weight mohair blend. I used Mary Maxim mohair glitter (1 skein)
    200 stitches, K 3 rows,
    R4) K4, yo, k2tog, yo k2tog across K last 3 st (a K 4 border on each end.
    R5) K across
    repeat these 2 pattern rows until piece measures 18". K 2 rows
    Knitted bind off loosely.

    If you want square ends, K 2 rows between the R 4) pattern rows.

    Thank you for asking! It forced me to write it down, I'm sure I will want it later.

    Puff Stitch Hat (Crochet)

    Hdc puff: yarn over, insert hook in stitch, yarn over, pull loop through even with height of chain or
    previous stitch. Repeat this step twice more in the same stitch, 7 loops on hook.chain at top Yarn
    over and pull loop through all 7 loops on hook. 1 chain at top of all loops pulls it all together.
    Single crochet decrease: Pull up loop as for sc, now go to the next sc and pull up loop. 3 loops on
    hook, yarn over and pull through all 3 loops on hook. (2 sc made into 1).
