Last of our camelias, Tahitian Lime butter/curd, and face towels for wheel chair bound friend.

My daughter is very emotionally drained as her dear friend nears the end of her long hard losing battle with MS. I put together these items for her friend and I had been cooking lime butter all morning. Our tree has produced a bumper crop again this year and my neighbours have "gifted" me with all their empty jars ..in case I run out! Therefore every day is cooking day, making lime curd to return to my neighbours!
Many bags of fresh limes have been given to our local Asian shop and restaurant too, who willingly take them..as opposed to me shovelling them into the rubbish bins! My grand daughter's school teachers have been grateful recipients this year too, declaring they will never buy lemon/lime butter from Supermarkets again! My recipe is my mother's and is as follows

1 cup pure freshly squeezed Lemon or lime juice
2 cups sugar
3 eggs
1/4 tsp gelatine dissolved in 1 teaspoon of boiling water

Mix juice and sugar over heat until dissolved. Add 3 well beaten eggs, stirring carefully to not separate the eggs and do not not boil, but the eggs must be cooked. Add the dissolved gelatine and pour into sterilized jars.
It is a great topping for pancakes or to use into a pie base for lemon meringue pies.

You have been busy. Must be a ton of limes to produce even that amount let alone supply the shops. Your camellias are beautiful too, my 7 camellias have been amazing this year and I swear I did not water them at all last summer so they have thrived on neglect.

That curd sure looks delicious wishing I was your neighbour so we can enjoy that on some toast together with a cuppa. I do hope your daughters friend is comfortable and doesn’t have to suffer too much longer. Poor darling so sad to hear. Hope John is coping well and also you take care of yourself. 6 more treatments for my DH. Love n hugs 🥰
