Appalachian Food

I discovered this delightful YouTube channel recently. Videos and recipes of Appalachian Food. I am a California kid, born and bred but my parents were from Texas and my Maternal Grandmother from Mississippi so my mother cooked many of these dishes. Brought back so many memories. Tomorrow I am cooking Pinto Bean Soup and Corn Bread.

When I was growing up, we ate pinto beans and cornbread, fried potatoes and usually had sliced onions to go with it (similar to what mattie cat said above).
As an adult, I fixed the same thing for my family.
As a senior citizen, I still eat pinto beans and cornbread but leave off the fried potatoes.

Pinto beans with salt pork is a meal that can't be beat. I've tried fixing them with ham, but it changes the taste.
