Asiago Garlic Orzo Pilaf ~ Serves 6
Ready in under 30 minutes

Quick, gourmet orzo pilaf made with chicken broth, asiago, and plenty of garlic is a creamy alternative that you'll make over and over again.
Great with chicken and roasted veggies.

Ingredients
3 cups low-sodium chicken broth
3/4 pound orzo pasta
5 cloves garlic, minced
1 cup grated Asiago cheese
salt
freshly ground black pepper

Directions
Bring the broth to a boil over high heat in a large heavy saucepan.
Add the orzo and garlic and reduce the heat to medium high.
Briskly simmer uncovered for about 7-8 minutes, stirring occasionally, or until the pasta is tender, and most of the broth has been absorbed.
Turn the heat off, but leave the pan on the stove. Add the cheese and mix well.
Season with salt and pepper, remember ~ taste first as the Asiago can be very salty. Serve warm.

Nutrition ~ 297 calories, 8 grams fat, 44 grams carbohydrates, 18 grams protein per serving.
