Beach Cake ~ Serves 12
Ready in 1-2 hrs

Made with cream cheese, eggs, yellow cake mix, pecans, butter, egg, and confectioners sugar

Ingredients

Cake
15-18 ounce box yellow cake mix
2 cups chopped pecans
1/2 cup melted butter
1 egg, beaten

Topping
3 1/2 cups confectioners sugar
2 eggs
8 ounce package cream cheese, softened

Directions
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
Combine the cake mix, pecans, melted butter, and egg in a bowl. Mix well and then pat the mixture into the bottom of the prepared baking dish.
In another bowl, combine the confectioners sugar, eggs, and cream cheese. Beat on medium speed with an electric mixer until smooth. Pour the cream cheese mixture over the cake layer in the baking dish.
Place the baking dish in the oven and bake at 350 degrees F for 35-45 minutes.
Remove the dish from the oven and let the cake cool then chill it before serving. Store the cake, covered, in the refrigerator.

Nutrition ~ 618 calories, 34 grams fat, 76 grams carbohydrates, 7 grams protein per serving.
