Sometimes I have no idea what to take out of the freezer for dinner and I will often get an idea by looking at a website for one of the meal delivery services and will then take the meat, chicken or fish from the freezer.

I like looking at the 'Lite 'n' Easy' site - they have a photo of the meal, the ingredients are listed, and they show the calories for each meal.
Other websites can be just as entertaining.

I am about to take a chicken breast from the freezer and thaw it in the fridge and tonight's dinner is going to be 'Chicken Parmigiana' with vegetables.

Do you think this is a good idea?

Sounds good to me. Bake the chicken breast in the oven with the proper spices and cheese and steam the veggies or bake the at the same time as the chicken.

Yesterday I found split chicken breast on sale for $1.99 and bought a package of them. Froze all but one and baked it last night with slices of potato which were spiced up like I like them. Also had a salad of tomato, cucumber, bell pepper and onion, Ranch dressing. Made a pretty nice and easy to fix meal.

I seek inspiration from Eating Well and other healthy sites on Pinterest. A good picture gives us idea. I get emails about health and look at those recipes too.
I made stir fry tonight of turkey kielbasa with asparagus Aldi marked down to $1.15 and some green peppers and tomatoes that were getting a bit wilted. I did not cook a starch for I am cutting down on carbohydrates and my husband eats very little of anything. I served mine on a bed of spinach like a salad.

I seek inspiration for meals everywhere! All of these places mentioned sound good. I've also recently printed copies of favorite entrees to keep in a notebook to remind myself. Sometimes my brain just runs dry of dinner ideas🙈

I do the same thing with the monthly menus from the senior center only because I assume
they're based on a senior's nutritional needs.

I watch cooking/homesteading shows on You Tube. Yesterday I took a jar of home canned chicken base off the shelf (chicken, onion, carrots, celery). I added some home canned broth I had I the fridge, thickened the broth with flour and vegetable powders added peas and had it over noodles. Today I will use the rest of the package of noodles (cooking for one a little food goes a long way) and have it again. Tomorrow if there is any left I’ll have it over rice. Three meals from one quart of home canned chicken. I could have spread it out over a few days or used the base in several ways, but I wanted to use up the left over broth, peas and noodles. My desire to use up little bits of food adds to the creativity of my meals. Mid week will be mac and cheese and (to be determined) Friday’s dinner will be big pot of chili to share with friends. Our temperatures are expected to be in the 20s (or colder) all week which is definitely influencing my meal planning choices.

Well, I made my chicken dinner but not 'proper' parmigiana as I just chopped up some sundried tomatoes and placed them on top of the piece of crumbed chicken breast and then covered the tomato with grated tasty cheese and placed it under the grill of my new oven.
I think I am going to be having a 'love affair' with this oven as it grilled perfectly.

I microwaved potato which I mashed with butter and had carrot and broccoli as the other vegetables.

When I dished up my dinner, I took the chicken to a 'higher level' and carefully poured over a small amount of white truffle oil and then enjoyed my dinner.

I had half a small mango with cream for dessert.

When should I come :)love:)? Of course I am in Florida so it will take a while to get there! Sound simply delicious! Enjoy.

Sounds good to me. Since GD is back for a while I'm "cooking" again. I usually just reach into the upright freezer blindly and what I grab I make 2 days later when it thaws out.
I love parm in any style, eggplant, chicken, veal, even pork tenderloin. We eat in a style many would think weird, usually only one item per meal, meat is usually between 7:30 - 10 pm. I do vegetables around 1pm, he has a bagel or English muffin in the morning. Lately I've upped my coffee intake from 2 to 3 or 4 mugs a day. My mugs are 30 ounce.

As someone who lives to eat rather than eats to live, I am subscribed to several cooking sites and find them all great for inspiration. I'm not a great recipe cook (except for baking) and often make substitutions or alterations as you did!

After 50 plus years of keeping house and really hating to cook, anywhere I can find inspiration and east recipes is great by me. I applaud you for cooking for yourself. If I didn't have a husband to feed I would subsist on soup, sandwiches, and salad, and way too much take out!
