Cajun Sausage and Rice Skillet ~ Serves 4
Ready in under 30 minutes

An easy and healthy one-dish meal made with fresh mushrooms, onions, salt-free Cajun seasoning, turkey sausage, rice, low-sodium chicken broth, and kidney beans.

Ingredients
1 cup sliced fresh mushrooms
1 cup chopped onion
1 tablespoon salt-free Cajun seasoning
10 ounces smoked turkey sausage
1 cup rice
3 cups low sodium chicken broth
15 ounce can kidney beans (optional)

Directions
In a large nonstick skillet, over medium high heat, heat mushrooms, onion, Cajun seasoning and sausage. Sauté 5 minutes.
Add rice to pan. Stir in broth and beans. Bring mixture to a boil, cover, reduce heat and simmer until rice is tender.

Nutrition ~ 447 calories, 7 grams fat, 61 grams carbohydrates, 33 grams protein per serving.
