Just cast onto straight needles instead of circular needles and knit back and forth. You will have to purl every other row if you want the hat to be in stockinette as shown in your pattern. If you knit every row, it will work out just fine but you will have garter stitch. When you knit in the round, you only have to knit to get stockinette but if you knit flat, you knit on the right side and purl on the wrong side.

I hate to sew seams and I don't like to fool with dpns so I would use 2 circular needles. If you use 2 circulars you can knit in the round without dpns. You don't start with a short circular and switch to dpns, you start with 2 medium-length circulars and knit until you're done. If you are ever interesed in knitting in the round with 2 circulars, there are a lot of You Tube videos showing how. However, you need 2 circular needles in whatever size you are knitting in. I usually use 24" cables on the circulars because it is more comfortable to me than short circulars.
