if you check on Ravelry or Bernet, those are my first places to search for something. you can usually tell by the look of the finished hat if it will roll or not. those places have good pics of the finished hat.
heavier yarn would also make it lay flatter.
or if you crochet you might want to go around the edges with a slip stitch.
someone else might have a better idea but this is what I would try.

Anything knit in stockinette stitch will roll. You could make the flaps double, or knit in seed stitch or garter stitch to make the flaps lay flat.

i could do that. The pattern called for stockinette throught out. I like the idea of double though. keep ears warmer. I just need to learn to double knit. thanks alot
