Easy Cheesy Spaghetti Squash ~ Serves 4
Time 1 hr ~ Prep 20 min ~ Cook 40 min

Spaghetti squash is a nutritious, but still filling, alternative to noodles in this easy, cheesy pasta-like side dish.
A touch of mayonnaise adds both moisture and flavour to this delicious vegetable side dish.
After the first bite, you'll never want to prepare spaghetti squash any other way!

1 small spaghetti squash (2-1/2 lb/1.1 kg), cut lengthwise in half, seeded
1 cup water
1/4 cup Heinz [Seriously] Good Light Mayonnaise Style Dressing
1 teaspoon flour
1/4 teaspoon garlic powder
3/4 cup milk
1/4 lb (125 g) light old cheddar cheese, shredded
3 slices reduced-sodium bacon, cooked, chopped
1 teaspoon cracked black pepper

Directions
Heat oven to 400ºF.
Place squash halves, cut sides down, in shallow baking dish. Add water. Bake 35 to 40 minutes or until squash is tender; cool slightly.
Meanwhile, whisk dressing, flour and garlic powder in medium microwaveable bowl until blended. Gradually stir in milk. Microwave on HIGH 2 minutes or until sauce is thickened, stirring after each minute. Stir in cheese. Microwave 1 minute; stir until cheese is completely melted and sauce is well blended.
Use folk to pull squash flesh into spaghetti-like strands; spoon into strainer. Drain well.
Place in 4 serving bowls.
Top with cheese sauce and bacon; sprinkle with pepper.
