OK Answer me this one. If I started with a Christmas Stocking for the first "sock" would I be learning the correct way to knitting socks.

Yes, it will teach you some important basic manuevers, but I think it really depends on the pattern. Of course you would not want a huge, wide leg or ankle portion on a sock you would wear. You would definitely want huge and wide for a Christmas stocking!!!
