12 ounces wholemeal flour
12 ounces sugar
6eggs
2ripe squishy bananas
About a tablespoon of veg oil.

Mix all together in a bowl til smooth, no lumps. Pour into cake tin, bake at 200C for about an hour, in middle of oven. Sometimes bakes quicker.... You know your own oven...

Hey gozolady! Looks delicious! I love banana cake & bananas! Maybe being a Queenslander helps! When the bananas are too ripe to eat I put them in the freezer as they are - skin & all & defrost them when I want to make a banana cake. Just cut the top off & squeeze the banana out like a tube of toothpaste. Will try your recipe. Thanks for sharing.
 
Ashamed to have to admit that I had to "google" Gozo. It looks to me like an unbelievably heavenly place. How did you manage to find yourself there?

It's a beautiful island.
We aimed to move to Malta, but this island is far quieter... Shhhh
