So my question is, How important is it to have matching lots in machine knitted projects? For example, if I am making a sweater, and the body and the sleeves are from different lots or the front and back are different, will it show?

It will show,but if you can make the whole piece from the same lot, it might not be as noticeable when the garment is assembled. It it most obvious when the row below is the old dye lot and the next in the new de lot in solid colors.
