I have knit many caps for midwife kits. It seems they like the ones that have a k2, p2 ribbing. I usually use #6 double pointed needles and cast on 60 sts (multiples of 4) using baby yarn. I make them 5 1/2" long. You can use either 4 double pointed needles or 2 single needles and sew up seam.
Try casting on 28 stitches on needles that give you a finished piece measuring about 6 1/2"x 8 1/2". I use 10's.
Knit each row for 61 rows (or 32 ribbed rows). Fold so the ribbed rows run up and down and sew together. Gather stitches at one end and pull closed and tie. Make pom-pom and tie to top of gathered end. Fold up a cuff on bottom. You're finished! I would check with the volunteer co-ordinator of your hospital to see if there are specific requirements.
