Risotto-Style Sausage and Mushroom Rice ~ Serves 4
Ready in 30-60 minutes

1 pound mild Italian sausage, sliced
4 tablespoons water
1 medium diced tomato
2/3 cup rice
2 cups chicken broth
8 ounces sliced mushrooms
4 sliced scallions
2 pinches saffron
1/2 cup undiluted golden mushroom soup

Brown sausages with water. Drain, but save 4 tablespoons drippings in pan.
Add mushrooms, tomato, scallions and rice to pan. Stir over low heat for 5 minutes.
Add remaining ingredients and cover. Simmer, stirring occasionally for 20 - 25 minutes.

Nutrition ~ 585 calories, 39 grams fat, 34 grams carbohydrates, 23 grams protein per serving.
