Spam Fried Rice ~ Serves 4
Ready in under 30 minutes
Spam is popular in Asian cooking - from Spam sushi to sweet and sour Spam.
It also is frequently found in fried rice.
Spam holds its shape when stir-fried and is a good substitute for ham in other fried rice dishes.
This recipe has a little extra kick from a jalapeno as well.
Ingredients
1 can Spam luncheon meat, diced
1 tablespoon vegetable oil
1 small onion, small dice
2 eggs, lightly whisked in a bowl, set aside
1 jalapeno pepper, take caution to remove seeds and ribs
1/2 cup shredded carrot
2 ribs boy choy cabbage (or your favorite cabbage)
2 tablespoons soy sauce
ground black pepper
3 cups cooked white rice
1/4 cup water, white wine or chicken broth
Directions
In a skillet or large Dutch oven, brown the diced onion in oil. Add jalapeno and cook 2 minutes. Remove and set aside.
Add diced spam and cook on medium heat until well browned and carmelized. Add onion, jalapeno, carrot; stir fry 2 minutes. Add all the rice and combine; cook 2 minutes. Season with pepper.
Push rice to one side of pan and add egg and soft scramble them add into rice mixture; toss. Add in soy sauce. Toss gently.
Add cabbage over top of rice mixture and then pour your liquid over top. Add a lid turn down heat to low and cook 5 minutes til cabbage is wilted. Give fried rice another stir to combine.
If you like, add 1 more tablespoon oil over top and toss again to give the dish a nice gloss.
Vegies can be varied in this dish to suit your taste
