I started this post and if I do say so myself, it's been really interesting. Thanks everyone for your wonderful suggestions.

I do a trio salad plate.
Scoop of pasta salad
Scoop of chicken salad
Scoop of Apple,raisin, nut and mayo
(Except I have a nut allergy!
Any kind of salad is good.


Another yummy salad on a hot day is the Columbia House 1905 Salad
Google it...it's yummy!

Only once or twice a year, on the very hottest days, my mother would make fruit salad and muffins (with fresh Maine blueberries in August) for supper. The salad was special. Remember--this was in the '60s. She started with a commercially jarred fruit mixture called "Fruits for Salad," and she drained the syrup out of the fruit. She made a light custard sauce, to which whipped cream was added, and that was mixed with the fruit. Canned peaches, pears, and a very few red cherries were the fruits. It sounds very basic now, but it is one of my favorite food memories.

Your 7 layer salad looks a lot prettier than mine. I put it in a 9x13 cake pan to make getting all layers easier.

Part of the pleasure is its look, so we always use a glass bowl to see the layers.The hard part is digging down to the bottom to get all the layers. :sm01:

7 layer salad

Prepare night before except the topping of bacon, tomatoes and cheddar cheese.

1/2 head of iceberg lettuce
1 cup of frozen peas ( I like 2 cups)
1 cup each of red and yellow bell peppers (sliced in thin strips or diced)
1 can sliced water chestnuts
1 cup diced celery
1 cup green onions
In that order.

dressing-
1 cup mayo
1 cup sour cream (or cottage cheese)
1 cup parmesan cheese
1 tbsp minced garlic
1 tsp garlic salt
3 grated eggs

mix together and
Spread dressing over top of salad- cover with saran wrap and refrigerate over night.
To serve, spread 1 cup diced tomatoes evenly,cover with 1 cup grated cheddar cheese, sprinkle as much bacon bits on top,as you like. I also add sliced black olives with the bacon.

my mouth is watering!
