Vegetarian Okra Gumbo ~ Serves 4
Ready in 30-60 minutes
Okra, tomato, and green pepper with veggie broth and white rice makes a healthy and satisfying meal and even better leftovers.
Ingredients
1 medium onion, chopped
1 medium green bell pepper, chopped
1 medium tomato, chopped
2 cups sliced okra
1 handful sliced mushrooms (or variety of choice)
2 tablespoons butter
1 packet imitation ham powder (Jewish foods aisle)
1 tablespoon fresh oregano
1 dash Cajun*/Creole* seasoning (or more)
1 cup boiling vegetable broth or water
hot white rice

Directions
In a Dutch oven or seasoned cast iron pot, melt the butter and then sauté the onions and peppers until soft on medium high heat.
Then dump in the rest of the stuff and season.
Add more broth/water if you want the gumbo soupy. Cook over medium heat until the gumbo thickens, about 45 minutes or so.
Serve over hot white rice.
